I think I've got the hang of this challenge.
And that's a somewhat scary thought. I'm getting used to eating this not terribly nutritious diet. In terms of feeling or not feeling hungry, that is. The repetition is no fun. And the free smoothies are totally saving me. Coupons are a godsend.
Creating a healthy, well balanced, filling diet with enough fiber and nutrients is a job unto itself. And I work from home so I don't have any considerations about what I'd eat if I had to take lunch with me to work even if I could. I'm learning so much from this challenge.
Breakfast: 2 slices toast, 2 eggs (sunny side up) $0.54

Lunch: 2 slices toast, peanut butter, apple $1.07
Dinner: pasta, tomato sauce, spinach, orange juice $1.10
